Farina® Cheese Spoon Bread

Spoon bread is a great starch alternative to potatoes or rice. This cheese version is delicious with ham or roast pork. For a spicy addition, stir a drained, 4-ounce can of diced green chili peppers into to the batter. Or, for a hearty accompaniment to breakfast, stir in ¾ cup of diced cooked bacon and use the bacon cooking fat to coat the baking pan.

Ingredients

  • cups water
  • 1 cup Farina
  • 1½ teaspoons salt
  • 4 tablespoons butter, at room temperature
  • 1 cup milk or cream
  • 4 eggs, lightly beaten
  • 1¼ cups grated yellow cheddar cheese

Directions

  • Preheat the oven to 375°F.
  • Grease a 9-inch cast iron skillet or square baking pan.
  • Pour the water, Farina and salt into a deep saucepan and place over medium heat.
  • Bring to a boil, stirring often.
  • Cook two minutes, remove from the heat and beat in the butter.
  • When the butter has melted, beat in the milk or cream and the eggs.
  • Stir in the cheese and pour into the prepared baking dish.
  • Bake 30 to 40 minutes or until a knife inserted into the center comes out clean.
  • Serve immediately.
  • Yield: 6-8 servings
